Arthur’s Oat Bars
Snacks are always a popular recipe request and these work well as they are filling and can be stored. I made these a lot when my kids were small, they were a great way of stocking up on low cost snacks, during the week. I wrote this apple, raisin and cinnamon recipe for small children, the flavours are very mild you can experiment with flavours you love.
The recipe is easy to make, but the key is to cool the oat bar in the dish/ tray, this will stop them cracking and help them hold their shape better, as they can be crumbly. I dedicate them to Arthur and his Mum Lottie, who I think have made them more often that me!
ingredients
100g oats (standard oats, not jumbo or rolled)
100ml organic milk, or non-dairy milk
1/2 apple, cored and grated
20g raisins, omit for small babies
1/4 teaspoon cinnamon
method
Preheat the oven to 180C fan. In a bowl then combine: oats, milk, grated apple, raisins and cinnamon. Mix the ingredients well until everything is combined, with the fruit spread evenly throughout the mix. Take an over proof dish, or tray, line with baking paper: empty the oat mix into the dish. Flatten and push the mix to the edges of the dish using a spatula, until you have a flat oat bar. Cook in the oven for 20-25 mins until golden and toasted. Remove from the oven and allow the oat bar to cool in the dish, before cutting. The oat bars will hold their shape better and firm up, as they are crumbly. Cut into squares.
Once cooled you can store in an airtight container for a couple of days also, if they last that long.

you can sweeten these for older children add a tablespoon of maple syrup
