Root Vegetable Rosti
These are a great way of cooking up some seasonal veg, here I am using a combination of carrot, parsnip and potato. I serve them warm with apple sauce. They are great as finger-food for toddlers and the whole family will enjoy these too.

These apple crisps are naturally sweet and are great for a picnic, when you are on the go, or as a quick pram snack. You can experiment with different apples; I have used organic gala apples, which are naturally sweet, but not as sweet as perhaps a pink lady apple.

Mini Egg Frittatas
This egg frittata recipe is so easy to cook, just prepare in a non-stick 12 portion muffin tray and cook through in a hot oven. For me this is a great breakfast option, as I don’t have cook eggs over a stove. It is also an opportunity to use up left over cooked vegetables etc. Chopped herbs work brilliantly, as does the addition of cheese for added flavour. These egg frittatas can be eaten warm or cold.
