Birthday Cupcakes
These are the cakes I made for my children’s first birthdays: simple vanilla and raspberry cupcakes. If you don’t often bake don’t worry they really don’t take long to throw together. They are a lovely recipe to bake together on a weekend, or for a homemade tea. You can opt for white or pink icing and decorate creatively! A cup of tea and a cupcake always brings a smile to my face.
ingredients
recipe makes x10 - x12 cupcakes
125g unsalted butter, softened
125g caster sugar (or you can add less e.g. 100g)
2 medium organic eggs
1 teaspoon vanilla extract
125g self raising flour
1 punnet raspberries
2 tablespoons icing sugar, for the icing
method
Preheat the oven to 180C fan. Beat the butter and sugar, until soft and smooth, the mix will also turn paler in colour. Add the egg and vanilla extract. Next, sift in the flour and fold the mix together. Spoon the cake mix into paper cases, with 2-3 raspberries per cupcake. Bake in the oven for 10-15 mins, depending on the size of the cakes, until cooked. Test and remove from the oven. Set aside to cool down.
Mix a little raspberry juice (just press raspberries through a fine sieve) into the icing sugar and combine. You can also use a little boiled water. This will give you an easy to pour icing. Top the cakes with a little of the icing and any decorations.
