Chicken and Apricot Burgers
These chicken burgers are a huge hit with my children, if I can’t find chicken mince than tukery mince also works really well. They are flavoured with grated carrot, parsley, dried apricots and garlic. The apricots add a lovely sweetness to the burgers, just finely dice so that the dried fruit spreads evenly throughout the mix. Chicken or turkey mince is lighter than red meat and has a lower fat content.
ingredients
Makes 12 burgers
500g organic chicken mince, or turkey mince
1 small onion, peeled and finely diced
1 large garlic clove, peeled and crushed
1 small carrot, finely grated
50g (6-8) dried apricots, finely diced
1 tablespoon parsley, finely chopped
1/2 teaspoon dried oregano
1 free range egg
2 tablespoons olive oil, for cooking
method
Preheat the oven to 180C fan oven. Take 1 tablespoon oil and gently cook the onion, to soften it, for 8-10 mins; add the crushed garlic in the last 2 mins of cooking. Remove the onion and garlic mix from the heat and cool. Once cool combine the turkey mince, onion and garlic mix, finely grated carrot, finely diced apricots, egg and parsley. Using a spoon allocate equal size burgers.
Take a large frying pan add 1 tablespoon olive oil and brown the burgers in batches (2-3 mins), remove to a baking sheet. Place the burgers in a hot oven to cook through, this will depend on the size, approximately 15 minutes. Check the burgers are completely cooked through, with no sign of pinkness in the meat. Drain on kitchen paper and serve.
